Thing #51: Become a Vegetarian for a Month

So I became a vegetarian for a month.  No biggie.

Times when this was hard:  that time we went to Fuddruckers and I ordered an extra-large side of mashed potato, forgoing the main event.

Times when this was easy:  the rest of the time

Vegetarian-friendly recipes that make this an easy thing:

veg1

Tomato soup with grilled cheese croutons

veg3

Nectarine Pizza with Basil and Balsamic

veg6

Parmesan and Spinach Orzo

veg4

Roasted Pear and Chocolate Chunk Scones

veg5

Peach, Tomato and Mozzarella Crostini,

Notice how the majority of these recipes contain cheese.  Now, giving up cheese was another story entirely.

Is little t turning into a food porn site? Maybe…

I may not be a vegetarian, but tomato soup with grilled cheese croutons sounds amazing!

I agree - I probably could go vegetarian for a while but I wouldn't be able to forego the cheese!

Those recipes look sublime - have to try those grilled cheese croutons! We eat a lot of veggie food but I could never give up meat entirely xo

T--where are you from in Ireland? I'm planning a road trip (for next week) and if there's something I MUST see and do, can you let me know?

I've just mailed you Ashley. So excited you're going to Ireland.

Me too Emma - for the love of bacon alone. But for a month, it was easy peasy.
